Ingredients:
Cooked meat
Olive oil
Yellow onion
Green peppers
Ginger
Fried tomato
Whole tomatoes (from the can or bottle)
Water
Salt
Black pepper
Thyme
Crushed red pepper or chili
Rice

Preparation:
The preparation of Jollof rice varieties in many countries. In Liberia the legs of pork are used with pork meat, salt and chicken. Use 1 kg of cooked meat such as chicken, bacon, shrimp, smoked pork chopped into small pieces and add 1/2 cup oil until it`s golden. In another pan sauté 1/2 cup of chopped yellow onion, 1/2 cup of green pepper (cut into thin slices), 1/2 cup of ginger and 1/4 cup of olive oil until onion gets golden. Add a can of whole tomatoes (2 cups) and simmer for 5 minutes. Add 2 cans of tomato sauce, 2 liters of water, 1 tablespoon of salt, 1/2 teaspoon of black pepper, 1 teaspoon of thyme and 1 teaspoon of crushed red pepper. Add cooked meat and simmer for 20 minutes. Afterwards prepare the rice using 2 cups of rice in 5 cups of water, a bit of salt, pepper, etc. cook until it´s smooth. Combine the meat sauce with rice. Put the Jollof rice in a deep bowl and in the middle add the meat sauce or the stew.
