Ingredients:
25 grams of margarine or palm oil
1 medium onion, chopped
2 fresh tomatoes, peeled and chopped
175 grams of carrots, chopped
175 grams of mushrooms, chopped
175 grams of chopped green pepper
300 ml vegetable broth or hot water with pepper (as desired)
100 grams of gari (gari is a roasted bean flour from cassava and it’s used as a staple food in a way as rice flour)
Preparation:
In a nonstick pan, cook the onion and tomatoes in margarine or palm oil, stirring until it’s pulpy. Add carrots and fry for few minutes. Add palm oil, and then add mushrooms, green peppers, broth and hot pepper. Cover and let it cook for 10 minutes.
Mix the gari, stirring constantly until all liquid is absorbed.
